It would be really good if can add the ability to enable/disable to add timestamp to pictures. Sometimes we have clients that request pictures to be timestamp and we have to use an external camera to take it.

I would like to be able to configure a watermark that appears on each photo I take in Fulcrum. Example would be to include Date, Time and Caption on each photo. Might also be good if I could have fields from my report be reflected in the photo watermark too.

Yes. On some versions of Android you can change the default camera app but not all versions allow it. We have tribal requirements that dictate timestamps and this is necessary for our work.
